I’m marrying a Sunni guy who wants to do the marriage the Sunni way with a Sunni sheikh.
My family wants us to do it both the Sunni and Shia way.
So I would do one in the Sunni mosque with the sunni sheikh, and one with a Shia sheikh.
Is it permissible to do the marriage ceremony two different ways, resulting in two contracts?

The Exception of the Marriage between Shia and Sunni is allowed, given that one does Not fear for their (Aqeeda) beliefs.

According to Islamic Law, Two contracts are allowed as long as there is no change in the terms and conditions of both contracts.
